Smoked Ham & Vegetable Soup


Leftovers rule. Really, they do. Here is another recipe of my own.We enjoyed a smoked ham last week. I froze the bone with quite a large amount of meat left on it, with full intent, of having a delicious soup, to savor over a weekend. This is a great meal, once prepared the whole family can help themselves, all day. Also, a great weeknight meal to throw together in the morning, before you head out the door. 
Bonus! This one is really simple, cooked  in the crock pot, I literally put all the ingredients in the pot, turned it on high and let it do it's thing.  
Oh, yes, I have to mention that the house smells glorious.     

What you need:
1 large ham bone with considerable portion of meat left on bone
1 litre of organic vegetable broth + 4 cups of water
1 medium sweet potato, peeled and cubed
1 medium onion chopped
1 cup each of frozen corn & peas
1 cup of baby carrots, sliced
3 large handfuls of shredded red and green cabbage
2 cups diced tomatoes
3 cloves of garlic
2 tsp cumin
1 tsp fresh ground black pepper
1 tsp of cayenne pepper
2 bay leaves

Allow to cook for at least 6 hours,  although longer is better.
Remove ham bone from pot, cut off all remaining meat and add back to pot. 
* Remember to remove the bay leaves before serving!
Enjoy! ~ great with fresh baked bread, or pita crackers!
