Sticky Garlic & Ginger Pork Tenderloin

 First, I will apologize that I do not have a " finish" picture of this delicious dinner. If truth be told, we were all so anxious to eat, that I completely forgot to take one before we started eating. This is truly, a cold day, stick to your ribs, comfort food and the smell will make your mouth water in anticipation.

 

What you will need. 
1 kg pork tenderloin, cut into bite size pieces.
1/2 tsp each~  black pepper and cayenne pepper
1/4 cup of flour

Combine above ingredients in a ziploc bag, shake until meat is coated.  
In a skillet,  cook meat in 1 tablespoon of extra virgin olive oil,  until browned.











Garlic & Ginger Sticky Sauce:
In a small bowl combine:
1/2 cup soy sauce
4 tbsp rice vinegar
4 tbsp ketchup
2 tbsp brown sugar
3 cloves of garlic~ chopped finely
1/2 tsp fresh ginger
1/2 tsp red pepper flakes

When meat is browned, transfer to crock pot, cover with sauce. Allow to cook on low, for 2-3 hours.
Next:
Add 2 cups each of sliced baby carrots and chopped broccoli.










Continue to cook while rice is cooking. 

Serve on Brown whole grain Basmati rice .
